Pasta, bread, and delicious desserts – all of it Made in Andermatt
Macaroni and cheese from industrial-sized packages, frozen six-packs of tiramisu, heat-and-serve bread: In many places, these are the basic ingredients of mountain catering. But because the Mountain Food catering operations at the Andermatt-Sedrun SkiArena strive not only to serve delicious food but also to meet their own commitment to sustainability, as many items as possible are produced fresh in Andermatt. Under the motto “KM Zero” – no delivery distances – fresh pasta and desserts are made there daily for their own needs, as well as fresh bread for the entire valley.
Panna cotta in serving glasses
In a kitchen next to the bar of Restaurant Biselli, two confectioners make pralines and chocolate creations for the restaurant’s shop, as well as desserts for all operations of Andermatt Swiss Alps – on peak days, up to 300 servings. Panna cotta, tiramisu, and other delicacies are portioned into dessert glasses and transported in bottle crates. The empty glasses are then sent back, leaving no waste on the mountains.
Pasta for skiers
The centrepiece of the pasta station at Restaurant Biselli is a versatile Italian pasta machine. Up to 120 kilograms of fresh pasta are produced here every day, from spaghetti to ravioli, such as for guests at the mountain restaurant Pastakeller at Gurschen on Gemsstock.
That way, Però not only saves on long transport distances – he also feeds hungry skiers with more tasty meals. “Fresh dough is more porous than dry pasta, and the sauce sticks to it better,” explains Però. Even though he buys locally as much as possible, he gets his pasta flour from Italy. “Durum-wheat semolina from there simply tastes better,” says the restaurateur with Italian roots.
Bread for the whole valley
Heat-and-serve bread is commonplace in the catering business – Marco Però prefers the fresh version. That’s why Però jumped at the chance to take over the Andermatt village bakery when the current owner was looking for a successor in 2018.
Today, seven bakers work at the village bakery every night making bread and pastries, but also buns for the Mountain Food burgers and hot dogs. The production is so large that fresh bread is sold not just to the operations of Andermatt Swiss Alps but also to restaurants from the entire region
